I'm not saying that the chain speed won't slow down at all but, the turnover rate in a packing plant is fairly high.    They train new employees for these jobs all the time.   

Most of the jobs on the kill line are very very repetitive, at least in a hog plant they are.   You stand in the same spot and make the same couple of cuts on carcasses all day long.     Its not like one person fully butchers a hog and then starts another one when the first one is in boxes.

Its hard work but it is not something that needs a lot of training or a real specific skill set.
