Cut it at milk stage and you can use any kind of conditioner or none at all. Wheat dries evenly in the milk stage as that milk came from stem moisture. Quality is not a concern with proper fertilization and wheat or oats in the milk stage can easily test 17%+ protein. That's the way all the soft wheat is done around here and I'm north of I20.
