Not sure how much you want to gamble, but on spring wheat, top dressing 10 gal 28% + 10 gal water immediately post-anthesis is giving on average anywhere from .5-1% bump in protein. It burns the leaves a little, but has zero effect on yield. I don’t know if you would get the same effect on your white wheat, but might be worth a shot on a portion of the crop.

NDSU and MN On-Farm Research Network have done some tests with this with good results.
