Don't rent a clunky car....rent something fun....sports car, convertible, Jeep.    Eat at different places, no McDonald's.    Rustler's Roost mentioned above is a fun place.   Take the wife shopping some place other than the mall....find that out the way Arizona store.   Take in a movie.   I know of a large car/motorcycle show on one evening at a large mall parking lot in Sun City or Mesa...can't recall for sure but the locals may know of it.  The hotel should have scenic one day driving trips brochures.  Using GPS gets you from point A to B.  Looking at a road atlas can show interesting routes.
