There is one way to find out.  Try it.  If you can scale your recipe down, take a portion of it and try. Other thought I have is to slice off the outside, and try to remove at least some of the glaze, then make your ham salad from that.

I have bought butt or shank hams in the store and made ham salad with it.  Over the holidays, you could buy a butt or shank portion of ham for under $1/lb.  If you want to make ham salad, maybe just buy a plain ham, and eat the honey-glazed ham as a ham - if you like it that way.

As I said, I have tried to make ham salad, but so far I have not had a recipe that I really like.  If you have one that you like, feel free to post it here in Kitchen Talk. I am open to new ideas for recipes.
