North Central Texas | It's all on the graders and inspectors who are usda/state employees. Even small plants that only run resale a day or two a week will have multiple people on site watching. You always get differences in grading because of the human factor especially in a big plant. Graders have seconds to determine grades. Other inspectors are responsible for checking how it ends up.
Biggest eye opener was seeing a group of old calves get graded down. Old boy that owned them was pissed, he raised them, and knew how old they were. The bones and color said he was full of crap. | |
