Baked potatoes with all the fixings are easy and cheap.
Tacos or taco stack up is also in our rotation of meals. Stack up is just corn chips with meat, rice, salad, beans, cheese, sour cream, etc all in a pile.
Green chili stew with pork is coming up maybe next week.
Sometimes just cold cuts and sandwiches goes over pretty good if everybody is busy.
