DJI has their Ground Station Pro app where you can setup an area to fly and it will take care of pretty much everything. Unfortunately it does not stitch the images. On the software side I have used mapsmadeeasy.com as well as tinkering around with OpenDrone Map and it’s off shoot WebODM.
