West Central Wisconsin | I've made elderberry wine in the past and used the freezer method mentioned above. I bought a steam juicer and you could put whole clusters of clean elderberries in and extract the juice. Much easier and if you have access to Concord grapes you can make the best grape juice ever. When making my first batch of wine I discovered a green sticky substance during fermentation. This is not uncommon!
