Sounds like the tank vent is clogged.

Sorry Clay, I mis spoke.
What I intended to say is that it sounds like a clogged FILLER TUBE VENT.
The filler tube vent is a very different animal than the fuel tank vent.
The filler tube vent is a fairly large line (1/2 inch ?)running from the top of the fuel tank to a nipple in the top of the filler pipe ABOVE the spot where the fuel nozzle dumps fuel into the filler pipe.
It's only purpose is to allow air in the fuel tank to exit the fuel filler pipe while filling fuel so it does not trap air in the tank and cause the fuel blow back your experiencing.
The tank and filler pipe vent nipple are usually connected by a rubber or plastic hose that may be collapsed or kinked, restricting the flow of air out of the tank while filling it.
I have no experience with an Escape, but I suspect it has a filler vent like most others.

EDIT: This from a Ford Escape repair site. "Gas tank was slow filling. The dealer told me that almost all of their 2007 and 2008 Escapes have a problem where the gas tank vent gets clogged with ice and dirt. There is apparantly a TSB on it. They fixed and cleaned the fuel tank vent as per the TSB. "
