A multi-product unlock is necessary anytime you want to be able to enter more than one product on the RUN screen. Split planter, two liquids, a liquid and an Injection module, a liquid and a granular product are all situations that would require a multi-product unlock.

Since you will only be spraying one product at a time, the multi-product unlock is not necessary for you.

Concerning setting up the tank mixes. The tank mix setup is just your recipe for the tank mix. If you plan on mixing all your batches in the same ratio (putting in the same amount of chemical for a full batch) then you can use the same tank mix for each situation and merely change the rate of application when you spray.

In other words, you always mix the batches the same but increase the spray rate to get more chemical per acre.

If on the other hand, you plan on spraying the same rate on each field but mixing some batches "stronger" to get the extra bang then a tank mix for each situation is the best way to go.

Suppose you plan on always spraying 10 gallons of spray mixture/acre but change the amount of glyphosate when the weeds get larger then I would setup a different tank mix for each. Since the tank mixes are really different (different ratio of glyphosate to water) you will want to setup a different tank mix for each situation.

In this case you may want to name them as 18oz Gly/water/AMS, 22ozGly/water/AMS etc.to keep them straight in your own mind. The Insight will ASSUME that you mixed the tank mix in the way that these tank mixes indicate. The reports, totals etc. are based on this assumption.

The tank mix gives the Insight the information so that it can determine the ratios between the various products in the mixture. This is how it is able to predict (based on the product applied through the flowmeter) how much of each component was actually applied.

If you tell the Insight that you sprayed with the 18oz tank mix but actually put in more glyphosate than that recipe would call for, then the totals etc. would be incorrect.
