I'm not a beef man but I had it explained to me like this. Steins are not going to bring the money, they take more feed, market likes them bigger, and you get less on a truck. I'm just relaying what was told to me. The one I finished was a big rack of bones that never plumped out still tasted good in the end. If I ever raise my own beef again it will not be a stein.
