...If you've never caramelized onions with potatoes...whether roasting, frying or even deep fat frying, you've missed a treat. Take a couple or three potatoes sometime...wash and dice them in 1/2-3/4 inch pieces...and toss them in a 9x9 pan (you want a big enough pan so there is only one layer) with a good amount of olive oil. (4 tablespoons). Season them with seasoning salt, Onion powder, Garlic powder, Rosemary (I grind mine in a pepper mill to get every bit of flavour out of it), Thyme, Oregano....(Just about any green spice in the cupboard, but these are the most important). Toss them in a 425 degree oven..and then about every 15 minutes give them a stir. At 25 ,minutes in...put a sliced onion in with them..(Have to wait till about half done or they'll burn). Toss them with the olive oil...add a little if they seem dry...and keep stirring every 15 minutes. At about an hour..the potatoes should have a nice browned color..and the onions should have some nice browned tips to them....Take 'em out and enjoy!!!
