Atleast hot in the middle, pink to brown it don't matter. Get the grill or pan as hot as possible first. Not real picky will even eat them red, another beer if purple like said before. A little salt if anything. No sauce unless a sub-par steak which I will eat cause not picky, but will use sauce.:-) free steak is the best, or atleast at COP.:-)
