Chilliwack, British Columbia | With cereal silages, "here", I have found 25-30%DM to be ideal, anything drier just doesn't work well. It looks much drier than that to me in the video, but is hard to judge moisture through a screen! In a bag, I don't think feed rate should be in issue, so long as you don't "lift" the pile in the bag during feedout, hard to explain as I have very little experience with bags.
As far as fermentation, smell it after you open it. If it smells good to you, it worked well. If it smells off, something went wrong. There is more science to it, but that is how I look at our bunks d:-)
