I had it happen to me as well. Adjuster came up with a yield 7 bu higher than what I had calculated on a farm this fall. I was confused as I had hauled the entire field to town and figured my yield using the dry bushels. I called him to figure out why he was coming up with a higher yield. He explained that insurance company used a different percentage for the shrink factor vs what the elevator used. (Harvested around 22% moisture). He told me to think of it this way - the elevator shrinks it more as it benefits them more, and the insurance company will shrink it less as it benefits them more. I thought it kind of stunk, but not much you can do about it.
