Color , protien,test weight,plumpness,and delivering contracted lbs. are the criteria they used .
Color because the nice bright barley needs less filtering .
Protien : Too high makes cloudy beer . They love 10% max is 13%
Test weight /Plump : Higher malt extract form heavy plump barley.
Contracted lbs . : They like to know to the lb how mauch barley they will have to store.
Also no sprouts , pure variety, no wild oats , weeds etc.
