Just remember, If you were working the engine hard and got out and measured temps, then oil temp tends to be roughly 30F hotter than the cooling temp, so 185F + 30F = 215F oil temp, SO if you were pointing your infrared gun at the lower part of the engine, AND that part of the block was in the "crankcase area" of the block, getting hit by hot oil, then I would expect those temps(around 200F, that you mentioned)
