| Are they stuffed peppers or a pepper ring with just an egg inside?
I love stuffed vegs, peppers, tomatoes, egg-plant, squash or even potato.
With a sausage meat stuffing (half lean pork, half pork fat), onions, thyme and basil.
My grand-mother used to add stale bread soaked in warm milk then pressed, with a whole egg to bind with the meat, it makes more stuffing with less meat. Probably a way to save money, but it tastes great too, I don't make stuffing without bread now.
Tomatoes, peppers and potatoes keep their "hat", but you can top with grated cheese for squash and egg-plant halves.
There's just too much squash in a garden to keep up with, stuffing and freezing make nice meals in winter. | |
