Have you sharpened the knives so much that they have lost their bevel? If the back of the knife hits instead of the sharp edge it will pull material through without cutting it. There should only be about one eighth to three sixteenths of an inch that actually contacts the grinding stone. If you are more than that you will need to grind a new angle on the back side of the knife.
