...will just give you measurements off the top of my head...

1 heaping cup flour
2 tablespoons sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt (less if you're dealing with blood pressure issues)
1 large egg
1/4 cup milk (adjust to desired consistency)
1 1/2 tablespoons of vegetable oil...or melted butter
1 teaspoon lemon juice, lime juice..or in a pinch vinegar
1/2 teaspoon or less of vanilla (The vanilla is optional...it adds an interesting flavor, you could add nutmeg...or several other flavors that interest you from your cupboard)

...You have to have baking soda in a pancake....It has some kind of chemical reaction that makes the pancake brown well...the sugar also helps it along. Adjust your heat according to how thick or thin your batter is. Mix dry ingredients first...then add egg, oil, milk, vanilla...and last but not least, the lemon juice. It makes the baking soda and powder work better. (You could use buttermilk instead of the milk and lemon juice...but who keeps buttermilk around all the time?)
Leave the mix rest for 10 minutes while your griddle warms up (believe it or not but stirring it up can produce glutens..and you want them to relax just like in bread).... and don't have excess oil on the griddle. Wipe some on with a paper towel (Use a non-stick pan if possible).
