Baler should work fine. I've had great luck with stalks feeding in by removing the windgaurd tines that are mounted on the round pipe in front of the pickup. I can probably go a gear or two faster that way.
I've also seen the rotary rakes work fine for windrowing stalks, though I don't have any personal experience with that setup.
