Whiskey, Tango, Foxtrot | I have a little experience growing specialty crops for someone else, and I can tell you that while a contract is good and proper, it isn't worth much when it all goes bad. Get some money up front, or make sure you have at least one extra backup buyer. As far as a crop disaster, I was only ever paid for what I delivered. As the grower that is on you.
Biggest problem is someone who wants a few acres of this or that is usually financially unstable. Not always, but seems that way. Specialty crops are especially volatile.
