What about beans? One of the farm magazines had an article a couple years ago about some guys planting beans that weren't even close to a maturity that they could grow in their area. They were using them for cover and to fix nitrogen. Supposedly they were getting another 40-60# N that way. Sounds good, if all you want is to keep weeds down.
