Jim, I can assure you when there is more demand for CHB than hererfords available, any animal that meets their carcass specs goes in the box, same with CAB, when carcasses meet specs they get the label and pay a premium regardless what color they are, don't ask me how I know. It is all as you say, a marketing program and nothing more. Strip the hide away and it comes down to yield and grade | |
