I think ultimately your problem is the 11% beans, as you no doubt know when they get that dry you will get shatter loss just by looking at them. IF they aren't popping real bad in the field, you might consider waiting until after the next rain and take them off when they are 13-15% instead. Hard to wait I know but it will make a difference. We did some last week for the neighbours, 10% beans we bouncing off the cab windshield so bad you would swear it was hailing outside, got a small shower overnight and the next afternoon when we started back up shatter loss was greatly reduced, beans were 14.4%
