Will cattle eat high chopped stalks if they have alternate feed sources?

Subject: Let me rephrase. Will they eat what is left in field after chopper was there and left stalks high?

Jim, you were pretty close to what I was asking. We chopped silage off the field and left the stalks high. Didn't know if cows would try and mess with those high (potentially high nitrate) stalks, if they were getting fed good otherwise. I need the space and didn't know if I should consider destroying the remaining stalks prior to letting cows in there.
