In a worst case scenario I would not do anything to the field until the check from the insurance co was in my hand and I would ask your insurance agent to highlight the clause in your policy that allows you to do anything. You are just talking to many $$ to risk the insurance co coming back later and saying that you needed to let the crop mature and get harvest samples.
