I kind of disagree on the heat.  I cook them as hot as possible and feel it does better.  Best case is to start with a room temp steak so they don't have to be on the grill and get dried out so much due to bringing them up from fridge temp.  My opinion anyway, more than one way to skin a cat.  Ben
