NY strirp, strip loan and T-bones are my favs as well. I like them a good 1" to 1.25" thick, 6 minutes on one side ( low heat on the BBQ) and 4 minutes on the other side, comes out medium rare. I think aging is the secret, but even a well aged steak can be ruined by too much heat during BBQing. If yours are coming out tough I suspect to high of heat.
