Subject: Flat Iron Steaks......

Lancaster County, Pa.

I beg to differ on the flat irons......I have eaten quite a few from my own steers and I have yet to find one that wasn't good. Maybe a little more lean than some other cuts but very flavorful and verrry good, IMO. Possibly a difference in butchers??
