Personally I would tell you where to shove it. I have worked many days without a day off but not on the scale that you are asking about. If that employee took 1 day of vac a week he would still be looking at 22 weeks without a day off. What kind of family life could anyone have under those circumstances.
But to be fair, if your talking about yourself, then that is a choice that you make and you would only have to answer to your own family.
If you and he had worked out an agreement for those type of hours then so be it.
