I have and do use plastic barrels also. (Ranch Hand mineral tubs) The downside of plastic tubs is when they get close to empty they can be pushed around or tipped over easily. When the plastic tubs get empty and blow away I've found them 1/4 mile from where they were supposed to be.
I put the plastic tub in an old semi tire, they press in just right.
best free choice mineral feeder for pasture?
