As far as doors - around here those sizes are the least expensive sizes, even up to 26 ft wide. After 26ft then the hydra or bifold become more price competitive. I would consider a 24 or 25 ft wide instead of your 20ft.
as far as pitch - i would want at least 2/12 pitch. In our area 30lb snow load is standard, but with some of the heavy snow/ice storms lately, 40lb snow loads seem to becomeing the standard. If i were you, i'd request a heavier snow load. What does your area recieve for snow and ice? Snow doesn't aquimulate on my north roof building - unless it is wet heavy snow. It generally blows right off while snowing.
