For the ceiling i think best is to run steel across the trusses with no added framework, easy and cheap. Just keep in mind it takes better quality steel than menards to span the trusses, it will sag. Insulation in the ceiling, either be putting fiberglass insulation as you put ceiling steel up or blow in insulation when your done. If you want cheap put drywall on the walls with fiberglass insulation behind it. If you don't want drywall on the walls (I didn't) steel is really what should be done because OSB or plywood is flameable. I'm going 8' high with OSB on the walls then steel everywhere else, fiberglass insulation everywhere. This will get you a very nice finished look.
