I don't think your wife will find it very relaxing to go without your child. If she won't fly maybe you could find a train route that gets you where you want to go or just drive. My wife and I never left our kids with anyone else even for a weekend and I think we are still OK (not crazy or insane, didn't get ulcers, no depression). We also aren't drinkers and don't like to be around people that drink too much.
Vacation for stressed out wife and me too.
