My lovely Bride loves that Pioneer Woman cookbook and website, and I've got to admit there are some great recipes on there. I think I've gained 5 pounds since she started cooking that stuff. Since you probably like and have access to good onions, try the Marlboro Man sandwich. We did it once with store onions and it was good, but with real homegrown onions it was great.
