| I don't know how much responsibility is being put on you , but the but the quality of the goat is going to make or break the event . Just like lamb VS mutton . Idealy you want a kid that is grain fed about 6 months old , hopefully with some meat goat traits so you have some muscling. Goats are like deer , what fat they put on , is cover inside and outside of the body . They don't marble . Slow roasting is good , just don't let it dry out . Look for Greek or Lebanese recipies to help you . Feeding that many people you may need 2 depending on how it will be served . Quality goat is very mild and tasty , prepared correctly you'll have a bunch of people looking for more. | |
