then let cool till ( can be 3 hours, also overnight works Great ).
Throw some liquid bbq sauce on when grilling which carmelizes to the rub etc.
Internal fully cooked meat temp is at thee very point of 155 to 165 degrees internal.
( 10 to 12 hours at 180 and there won't be any meat left, maybe cooked seasoned bones )
