granto, how is three phase power billed in your area vs. single phase? The coop I am on considers three phase "commercial power", and has what is called "demand charge", that is based on peak load in a certain 24 hour period. In my area the demand charge is high, but the kW used after the demand is set is cheap. For example, if before harvest season I would start two 30 HP fans and let them run for a few minutes to make sure they are working OK then shut them off, I would be billed nearly the same as if I would just let them run all month. I decided to stay with single phase and convert it to three phase because my monthly bill is much lower by not having a "demand charge" in addition to not having to pay the coop to bring in the 3 phase line from a 1/2 mile away. Utility costs and their method of billing to different types of customes do vary greaty between different coop's and private utilities, so it may be very different where you are at.
