MY guess is you'd be better off buying a 1Klb steer and finishing it off over 30-45 days then butchering. You'd be in it for under $2K with the beef in your freezer. There are just too many variables in the long run for 1 hd. It will be more work than you would think, then there is always the chance it gets sick or dies over the next year you have it.
