Try driving your pickup back and forth over your wife's kitchen garden and you will see why the ground gets "hard".  Then go in and drive over it again and pulverize it to powder, etc.

But if the garden has been mulched, the wheel damage on the soil will be dramatically less. 

Abundant mulch cover and the soil structure from continuous no-till help minimize the damage from wheel traffic, although I agree 100% with you and Steve about needing to exercise caution on this anyway.  I'm a big fan of oversize tires (radials, with *proper* inflation pressure), and to some extent, tracks.
