ND | I've owned two vehicles that were repairables and I'd buy a third in a heart beat. I've got a Superduty that was rolled over and repaired. It's got about 110K on it since the rollover and I haven't had any issues or electrical gremlins. My brother just finished his Superduty about a week ago that was a rollover also. He just replaced the top clip of the cab and 3 doors. If you can do that it will save you a bunch of work switching the dash, interior, etc over. Switching the interior over really isn't that hard to do, it just takes time. If you can buy it back for the right price and get parts reasonably I wouldn't be afraid of fixing it.
As far as engine damage from being on it's side, I wouldn't worry about it. The fuel pump is run off oil pressure, so you will actually kill the engine from lack of fuel pressure before your oil pressure drops. I had it happen when an o-ring went out on the HPOP.
Edit: I see the guy above beat me on the fuel pressure.
