couple things important for good ribs:
1. remove the skin on the backside of the ribs
2. keep the temp low...never more than 240 degrees
3. Depending on type of wood being used, don't allow wood smoke more than 2 hours on ribs
4. NO SALT while smoking ribs.
5. After the smoking part is done. slather a little thin sauce on and wrap in foil while continuing to cook
