We fry our homemade Idaho Russet french fries in canola oil at 375 degrees. Peel and cut into french fries, (not home fries or jojos) and soak in cold water. Then blot dry with paper towels. Fry for approx 8 minutes until lightly browned. Remove from the oil and let cool, when cooled to room temperature its back into the 375 degree oil until the desired texture is obtained, dump them in a pan and Salt them immediately. We like them crispy on the outside and soft in the middle. I fill the basket completely full. Works great every time. Paul
