Subject: RE: Making homemade french fries

central - east central Minnesota -

150 farmer - 3/3/2024 18:20 What kind of potatoes are the best for making home made French fries? We had a fish fry last night in our shop, and I got Yukon Gold potatoes. Boy was that a mistake. They were like mush after cooking. . Suggestions?

Idaho (Russet) potatoes are the best for frying. Those are the ones grown for processing of all frozen and fresh tater products. Reds and Yukon's are good taters for boiling and mashing/riceing/smashing . . . .

ETA: after cleaning - soak them in cool water before frying. Offers a more crisp result.
