Have a 40ish year old pear tree that I gave a 50% or so trimming a few years ago. Probably took 15 feet off the top. The amount of energy that dang tree has used every year since trying to get that growth back is incredible. Right now I'm sure I have half a pickup box of water sprouts 3-6ft long to take off again. I had assumed it would lose a little bit of roots or something over time to compensate for the smaller top, but it must not have yet. It hasn't skipped a beat on producing either. Not exactly the same as an apple, but perhaps this will be helpful.
