Without knowing how it’s setup, no one knows. Is this 500 accounts, or 5? You may be able to sync from old server to a desktop/laptop with outlook or something and get the mail/contacts physically downloaded. And then connect outlook to your new server, still do mail thru outlook, thus it would all be accessible by the user.
