NE WI | Making snack sticks brought my 15 liter electric stuffer down to its knees. I think the reason store bought snack sticks are so fatty is because thats the only way to stuff them. My cousin who makes this stuff for a living tosses in big chunks of beef tallow in the snack stick mix. Adding water you would need to perforate the casing to let water out.
Tasty but I’ll stick to the 3” casings for summer sausage only. Takes too much time with those little casings.
