Mix the seasoning with water before mixing with the meat. The water will not affect the product at all.

Keep everything VERY COLD. Otherwise, the fat will separate and stick to your mixer, stuffer, etc.

I like to mix the meat and seasoning, and let it sit for a day to let the cure and flavors get to know each other. Then stuff the next day. Or mix and stuff one day and cook the next.
